I am a pretty simple girl when it comes to cocktails…but every once in awhile I want something a little different, something fancy. I came across this recipe on ANTHROPOLOGIE’s blog and just had to try it. Blackberries, thyme and champagne…oh yes! I cannot express how fabulous this cocktail is.
1 bottle chilled champagne
1 cup fresh blackberries
1 cup sugar
1 cup water
1 bunch fresh thyme (keep a few sprigs separate for garnish)
1/2 lemon, juiced
For the thyme simple syrup, bring the sugar, water and thyme to boil in a small saucepan. Remove the syrup from heat and let steep for 20 minutes, then remove the thyme and discard. If you aren’t sure you like thyme, just add a few sprigs or steep for less time.
This Blackberry Thyme Champagne Chiller is just the right amount sweet with a little tang from the lemon juice. So this weekend, go ahead and try something different and don’t be afraid to be a little fancy.
